The Weller Full Proof is bottled with no water-dilution and is not chill-filtered ensuring a more flavorful experience.

Nose has a strong hint of vanilla, cherry and baking spice promising a delicious treat.

On the palate, the Weller Full Proof has a buttery feel, rich in baked apple flavor, with hints of sour cherry, vanilla, baking spice and a bit of oak.

The finish is long and warming, rich in spice.

Weller Full Proof is strong, as you might expect from something bottled at 117 proof but entirely drinkable.

There is a slight burn on the finish, but nothing terrible and the rich flavor makes up for it completely.

This is remarkably good bourbon, similar in many ways to the Weller Antique 107, with additional baking spice on the finish achieving an incredible pour.

There is one fact worth knowing about the Weller Full Proof:

  • Does not have an age statement but is aged for around 6 to 8 years.

The nose is mostly sweet, with hints of brown sugar and oak.

On the palate it feels warm at first then mellows into a smooth wheated bourbon rich in honey, caramel, cinnamon with a creamy feel to it.

The finish has a medium length, is pleasantly warm, with a tad of oak spice and the traditional sweet brown sugar hint from Buffalo Trace.

The Weller Single Barrel drinks beautifully neat although a drop of water will tune-down the initial warmth while bringing additional sweetness and wood.

This is a very nice dram, but I don’t recommend buying it at secondary market prices.

This is good but not good enough to pay crazy prices for it. But if you are lucky to find it at MSRP don’t doubt about hoarding up as much as you can and treating it as an investment vehicle.

  • It doesn’t have an age statement but matures for around 7 years.

Weller Single Barrel and Full Proof are wheated bourbons

According to the laws that govern bourbon distillation, the mash bill has to be made from at least 51% corn.

Most producers use rye as secondary grain but Weller uses wheat as secondary grain.

Wheated bourbons have a softer and more gentle flavor as opposed to bourbons that use rye as their secondary grain, and have a slightly sweeter taste.

Weller was the first bourbon to add wheat to the mash back in 1849 when the brand was established.

By the turn of the century the brand and the distillery were acquired by Julian van Winkle making an awesome trivia fact to share over drinks with friends.

Weller Full Proof vs Weller Single Barrel: Which is better?

Full Proof comes on top

  • Both are incredibly good, but I’d choose the Full Proof over the Single Barrel as I’ve a penchant for high proof yet smooth drams; reason I love pours like the Wild Turkey Rare Breed, Islay Scotch whiskies and agave spirits from Mexico.
  • Most people get scared by high proof drams thinking they are hot but this is not the case. When distilled right high proof offerings are not harsh and have more body as they didn’t go through water dilution before bottling.
  • If you buy a high proof whiskey add a drop or two of water and that will be enough to tame it making it easier to sip. Over time you will grown accustomed and enjoy it straight from the bottle.
  • Remember that is easier to tame a pleasantly warm bourbon than to raise from the dead a dull pour.
